Summary

Red mullet is undoubtedly the king of the Mediterranean. Although the Mediterranean types are smaller and more bony than others they are also more tasty. Other fish can be cooked in this way such as red snapper sea bream or evenfillets of halibut cold or hot.

Ingredients

4 whole (or 8 if small) red mullets (cleaned)
3 large juicy oranges
few sprigs
1/2 lemon
2 teaspoon olive oil
2 teaspoon toasted pine nuts
few salt

Instructions

Ideally 2 hours ahead of cooking place some fresh dill in the cavity of each fish and lay them side by side diagonally in a shallow oval oven dish preferably glazed. Squeeze the juice of 2 oranges as well as that of the lemon or lime. Mix these juices with the oil and pour over the fish. Leave to marinate for about 2 hours spooning the marinade over the fish occasionally. Preheat the oven to 180 C/3so F/gas 4. Just before cooking sprinkle a little salt all over the fish. Cut half of the remaining orange into thin slices quarter these and place a few quarters over each fish. Bake for 20 minutes. Take out of the oven baste sprinkle pine nuts over and return to the oven for 10 minutes. Serve garnished with dill and the remaining orange half cut into quarter slices.
